How do you find F-8 in the darkroom under safelight?

Count the clicks from wide open. Usually, enlarging lenses are f/4, so f/4, f/5.6, f/8, i.e. two clicks away.
Some enlarger lens plates have a little red plastic thing that extends down next to the lens to let a little bit of light shine onto the lens. Maybe check to see if yours has this, or ask a camera shop about it.

If you don’t want to turn the white lights on, get a small flashlight. Just remember no to take your paper out of the light safe until you’ve turned the flashlight off.

You can count the clicks, in some dark rooms though the red light is bright enough to see the notches on the knob.
